Production area
Since 2008 we have been looking for a "Cru" particularly suited to the production of this noble variety of French origin. After years of research and various microvinification tests, we chose the “Ganger” Vineyard. A monopole vineyard, located right in Mazzon at an altitude of 360 – 380 meters above sea level, with clear south-west exposure and slopes of 3%–5%, characterized by a unique microclimate and deep soils with clay on the surface and calcareous substrate.
Winemaking
The selected and well-ripe grapes are harvested manually in mid-September and placed in small containers for transport to the cellar. The grapes - of which a fifth is vinified as a whole bunch - are passed by gravity into stainless steel vats for fermentation (25 days). Once malolactic fermentation has taken place, the wine is refined for 20 months in barrique and then further refined in the bottle for 18 months.
Sensory notes and suggestions
Colour: Intense ruby red, Nose: Hints of ripe fruit, cherry and morello cherry, berries, in particular raspberry and a light note of marzipan, Taste: Elegant and refined, very persistent, with good acidity and flavour. It has an excellent structure and soft, balanced tannins. Pairings: Elegantly accompanies second courses based on red meat, roasts and game.
