Winemaking
The peculiarity is given by the vineyard itself which, despite being on the hill, is not influenced by the wind that comes from Lake Garda, because it is located in a small basin. In the case of the Terminum this is a great advantage: only in this way can the prized noble rot evolve. After harvesting by hand, the grapes are placed in small containers. This is followed by approximately twelve hours of maceration, then they are pressed very delicately up to 1.8 bar. After decantation, the must passes into barriques, where slow fermentation takes place, for a period varying from 6 to 9 months.
REFINEMENT
Once fermentation is complete, the wine continues aging in barrique for another 7 -10 months and then in the bottle for a minimum of 3 months.
