Winemaking
Manual harvest and selection. Delicate whole bunch pressing and racking for natural sedimentation. Slow fermentation at controlled temperature in steel tanks. Malolactic fermentation and aging for 12 months on fine yeasts in large wooden barrels. Aging for 11 years on fine yeasts in steel tanks.

Description of the wine
Color: light and shiny straw yellow with faint greenish reflections
Perfume: The bouquet is surprising, and with each new attempt it reveals new olfactory components. Notes of herbs such as chamomile, lemon balm and lovage are combined with hints of persimmon and dried apricot. But in the very broad olfactory panorama of this Rarity there is no shortage of notes of bread crust and leavened dough, accompanied by aromas of flint.
Taste: On the palate this wine is soft and powerful, with a vigorous and lively acidity, which however leaves a refined taste in the mouth, ideally integrating the mineral notes. The aftertaste is soft and elegant, but extremely full and deep.
