DESCRIPTION
The Sauvignon Riserva from the Castelfeder winery has the merit of being among the most prestigious wines of the company, labeled "Burgum Novum". Following the harvesting of the grapes by hand, the must cold macerates for 12 hours and is subsequently fermented both in steel and in tonneaux. The wine, divided into equal parts in the two types of containers, matures there for 12 months before being assembled and refined for an equal number of 12 months in steel before spending a further 12 months in the bottle. With a fine straw yellow color with greenish reflections, it offers a varied and mineral bouquet, highlighting the smoky note typical of mature Suavignon Bianco. Not only that: vegetal notes such as nettle and elderberry can also be felt. The palate is satisfied by a robust structure, nice acidity and slightly salty tones. The performance ends with a long persistence.
