Winemaking
Manual harvest and selection of grapes. Delicate pressing and racking. Slow fermentation at controlled temperature in stainless steel tanks. Aging for 5-7 months on fine yeasts in steel barrels.

Simple pairings
South Tyrolean first courses based on speck, bresaola or venison salami, but also typical Italian dishes, such as Parma ham, dried tomatoes and olive pâté, herb risotto, nettle gnocchi or beetroot dumplings. It also pairs well with truffle-based recipes, not too spicy veal and grilled fish.
Description of the wine
Color: bright straw yellow
Nose: The bouquet of this Pinot Grigio is stimulating and fruity, with notes reminiscent of Williams pear, lily and white melon, alongside floral aromas that bring to mind a freshly mowed flowering meadow.
Taste: The refined balance of black tea aromas, nuances of melon and ripe grapefruit make this Pinot Grigio a pleasantly full and soft wine.
