Production area
The grapes for this wine come from our 3 Pinot Noir sub-areas: "Girlan", "Mazon" and "Pinzon". The vineyards are located at an altitude between 380 and 530 meters above sea level and are characterized, on the one hand, by moraine deposits on volcanic porphyritic rock and, on the other, by calcareous clay soils exposed to the west.
Winemaking
The harvest takes place manually in small containers for transport to the cellar. After destemming, the must is carried under its own gravity into stainless steel vats for fermentation (12-15 days). Once malolactic fermentation has taken place, it is aged for 12 months in large oak barrels (50hl) and 6 months in the bottle.
Sensory notes and suggestions
Ruby red color. Intense aroma with notes of cherry, morello cherry and raspberry. This wine presents itself with a lot of freshness and a juicy finish. Thanks to its velvety structure, it goes perfectly with a wide variety of meat dishes.
