WINEMAKING
Fermentation in steel with maceration of
10 days on the pomace and subsequent
malolactic fermentation in wood.
Maturation in French oak barriques for
a duration of 12 months. As of 2015 the
very modern fermentation cellar
allows for very delicate processing
of grapes both as single berries and also as bunches
whole also making use of the use of gravity.
The slayer, very sensitive, and a cautious one
transport of the grapes via “cuvon” which run on tracks, allowing for efficient processing
the grapes are very delicate and preserve their high qualitative integrity. This “State
of the Art” is in its concept, at the forefront of fermentation cellars in Alto
Adige, positioning itself among the most modern fermentation cellars in Italy to create
great red wines of excellence.
