QUALITATIVE IMPROVEMENT INTERVENTIONS:
thinning of 50% of the grapes in July
HARVEST: staggered, from the second to the last week of October
VINIFICATION: crushing, destemming and subsequent fermentation in stainless steel tanks at a temperature of
controlled fermentation, with a contact period on the skins of approximately 10 days
AGING: malolactic fermentation and refinement in small oak barrels
for a period of between 15 and 18 months; filtration before bottling
COLOR: intense garnet red
FRAGRANCE: notes of ripe blackberries, berries, hints of coffee and cocoa, animal notes
ORGANOLEPTIC DESCRIPTION: well structured, warm, long persistence with full tannins
