Description
Intense fruity notes on the nose reminiscent of elderberry, acacia flowers and sage linked by elegant hints of wood. A wine with tasty acidity and a long finish.
Aging potential: 6 – 10 years.
Sauvignon blanc grape variety .
Ideal pairing for cooking based on aromatic herbs and fish. Spicy dishes based on white meats and fresh cheeses.
Serving temperature: 12 – 14° C.

Winemaking
After a short maceration, the perfectly ripe grapes are pressed. The must ferments half in steel and the rest in barriques. Only this last part undergoes malolactic fermentation. After approx. 8 months of maturation on the yeasts, the two wines are assembled and carefully bottled.
Area
The vineyards have excellent sun exposure. It is a rather dry area with sandy and gravelly soils of morainic origin.
