Winemaking
Manual harvest and selection of grapes. Delicate pressing and racking for natural sedimentation. Slow fermentation at controlled temperature in large oak barrels (30 hl). Partial malolactic fermentation and aging for 10 months on the yeasts partly in stainless steel barrels (50%) and partly in large wooden barrels (50%).
Description of the wine
Color: sparkling and captivating straw yellow
Perfume: The perfume of this wine is distinguished by the components of exotic fruit, such as maracuja, averrhoa carambola and citrus fruits. These are accompanied by a note of flint with aromatic and mineral traits which completes the bouquet.
Taste: On the palate this wine demonstrates its importance. Attractive, with a flexible and compact structure. Its spicy, mineral and juicy hints give the wine a strong terroir character.
Simple pairings
It is a wine that goes well with veal with tuna sauce or marinated octopus, but also mixed appetizers and grilled vegetables, cheese dumplings or "garlic, oil and chilli" pasta, grilled fish with fennel, gratin crepes filled with radicchio or fresh tomini.
