Manual harvest and selection of grapes. Destemming of the bunches and subsequent slow fermentation at a controlled temperature and delicate movement of the must in stainless steel tanks. Malolactic fermentation and aging for 12 months, partly in large wooden barrels (50%) and partly in barriques (50%). For the refinement in barrique, one third of new barrels are used. Blending three months before bottling
Simple pairings
Roast chamois with root vegetables, or braised veal cheek with root vegetables
Description of the wine
Colour: ruby red – intense garnet with delicate purple tinges
Nose: The bouquet of this wine reveals earthy and mineral notes that go very well with the fruity aromas, especially of black cherry, plum jam and bitter chocolate.
Taste: Even on the palate, these fruity, spicy and at the same time soft notes determine a pleasant contrast, giving this Lagrein reserve an articulated and complex fullness
