Production area
The grapes for this wine come from our 3 Pinot Noir subareas: "Girlan", "Mazon" and "Pinzon". The carefully selected vineyards are particularly suitable for their microclimatic characteristics. The vineyards are located at an altitude between 380 and 530 meters above sea level and come, on the one hand, from moraine deposits on volcanic porphyritic rock and, on the other, from calcareous clay soils exposed to the west.
Winemaking
The harvest takes place manually in small containers for transport to the cellar. After destemming, the must is filled by gravity into steel vats for alcoholic fermentation (20-22 days). Once malolactic fermentation has taken place, the wine ages for 12 months in barriques (70%) and small 12 hl wooden barrels. (30%). The wine undergoes further refinement in the bottle for 6 months.
Sensory notes and suggestions
Ruby red color. Characterized by fresh aromas of berries and black cherries. The wine is elegant and fruity. Very velvety and delicate tannin with a long-lasting finish. It pairs very well with white meats, roasts, but also with grilled fish.
