Production area
Years of in-depth research and countless trials of making very small quantities of wine have been the cornerstone of this wine. The grapes for this wine come from 3 selected parcels in the “Girlan” sub-area, 500m above sea level. The vineyards face east and west respectively and cover a total area of 1.2 hectares. The 20-25 year old vines grow on poor, gravelly soils, formed by moraine deposits on volcanic porphyritic rock.
Winemaking
Fully ripe grapes are harvested by hand in mid-September and delivered in small containers. After destemming, the grapes are placed by gravity into steel vats where fermentation takes place (25 days). After malolactic fermentation, the wine is aged in barrique for 20 months. The wine undergoes further refinement in the bottle for 18 months.
Sensory notes and suggestions
Intense ruby red with aromas of berries, black cherries and a pronounced herbal spiciness. The wine is elegant and voluminous at the same time. It has a complex structure with well-developed and savory tannins. This wine accompanies main dishes based on red meat, roasts and game. Excellent with mature cheeses.
