Cornelius Cabernet-Merlot

Description

Intensely fruity and persistent wine with aromas of currants, cocoa, cinnamon and vanilla. Soft tannins complete this elegant and structured cuvée.

Aging potential: 10 – 15 years.

Grape variety 80% Merlot – 20% Cabernet. Espalier plants 15–20 years old, with a density of 5,000 plants per hectare.

Pairing with meats, especially red ones, game and mature cheeses.

Vinification Fermentation on the skins with subsequent maceration for 7–10 days. Malolactic in barriques. The first blending of the two varieties takes place in spring, followed by refinement in small oak barrels for 14 months. After careful filtration and bottling, the wine ages for a further 12 months in the bottle.

Vineyard area at an altitude of approx. 250–430 m above sea level on terrain composed of moraine and porphyritic deposits of alluvial origin.
