Classic Chianti San Giusto a Rentennano 2022
Produced from Sangiovese (95%) and Canaiolo (5%) grapes harvested by hand at perfect ripeness and fermented in enamelled concrete and/or stainless steel tanks for approximately 14 days, during which various pumping over and punching down are carried out. After racking, the pomace is pressed in a horizontal press and the wine is returned to the pressed wine. Malolactic fermentation is favored by heating the room in which the wines rest. Decanted a few times (filings) it matures in 500 liter oak barrels for approximately 10-12 months. Once bottled, it ages for 6 months before being marketed.
