Winemaking
The ripe grapes are harvested just before the start of winter. The passage through the press is carried out by hand and with great care, after 24 hours of cold maceration.
A natural sedimentation of the must is followed by fermentation at a controlled temperature of approx. 16° C for a few months. One year after the harvest, the wine is carefully bottled.
Area
Vineyard at an altitude of approximately 450 meters above sea level. Dry sandy-gravelly soils of moraine origin with medium structure.
