Grapes: 100% Cabernet Sauvignon.
Area:
Selected vineyards in the Egna area and on the majestic slopes around the town of Cortaccia. The vineyards (260 - 350m above sea level) with south-southwest exposure are cultivated exclusively in Guyot systems. Deep, clayey soils in the Cortaccia area and calcareous gravel from moraine sediments in the vineyards located in the eastern part of the valley in the municipality of Egna.
Yield: 50 hl per hectare.
Vinification: The bunches are destemmed and after a short period of maceration left to ferment for approximately 10 days at a constant temperature (28 - 30°C) with selected yeast strains. During fermentation the must remains in constant contact with the skins through frequent pumping over and punching down at regular intervals. After two prudent tappings, the wine undergoes a slow maturation process in barrique for 15 months. Bottling follows and at least another 6 months of bottle aging before this Reserve is put on sale.
Description: This Cabernet with an intense ruby red color is a wine with excellent structure, elegant and with marked peculiarities linked to the vine of the same name. The aromas of blackberries, redcurrants and green pepper prevail. On the palate it is broad and elegant with great persistence and complexity.
Pairing: It goes very well with red meats, poultry, game and mature cheeses.
Service temperature:
18 - 20°C.

The Castelfederer company from Egna was founded by Alfons Giovanett more than 50 years ago, but since then everything has been revolutionized. The assortment was expanded, the grapes produced were vinified in-house, the work in the vineyard was modernized and we opened up to the international market. The vine-growing area of Castelfederer is today 65 hectares, 70% of which white vines are grown. The focus is on Chardonnay, Pinot Blanc, Pinot Grigio and Sauvignon. As regards red vines, however, the focus is on Pinot Noir.
