Harvest: manual, carried out in mid-October
Vinification and aging: Fermentation in temperature-controlled stainless steel tanks for 10-12 days. Aging in French oak tonneaux for 24 months and passage in the bottle, for a minimum of one year, in special cool and dark rooms to ensure that the tannins soften and that softness and balance prevail in the tasting.
TASTING CHARACTERISTICS
At sight: medium intensity with ruby red and orange reflections.
On the nose: red fruits, tobacco leaves, hints of leather and delicate nuances of tar.
On the palate: excellent fruit on entry, cherries, red fruits and dried strawberries. In the mouth, persistent body and finish with soft tannins.
It is advisable to pour it into a decanter at least an hour before and drink it at a temperature of 18-20°C.
Food pairings: excellent with game, braised meats, stewed osso buco. Delicious with dishes based on truffles and mushrooms. Also excellent in combination with mature cheeses.
