Variety: Nebbiolo 100%

Grapes coming from the single vineyard 'Ravera', famous MGA, located in the municipality of Novello. The soil is calcareous-clayey with the presence of Sant'Agata marl. Ravera di Novello is a fabulous hill with south-west exposure. Altitude of approximately 400 m above sea level, average age of the vines of 30 years and density per hectare of approximately 4,500 plants on a total surface area of ​​approximately 3 hectares. The older part was planted in 1935.

Winemaking: Strictly manual harvesting of the grapes on 6 October 2018. Following soft pressing, fermentation lasts approximately four to five weeks in a steel tank in contact with the skins. This time includes pre- and post-fermentative maceration using the traditional submerged cap method. Slow malolactic fermentation in barrels until late spring. The wine therefore remains on the lees for more than a year without decanting.

Aging: Approximately 32 months in large oak barrels.

Description: Intense garnet red color. On the nose, initially austere, it recalls complex floral notes that open in the glass as the minutes pass, with hints of red fruit, chalk and white pepper. On the palate it is fine with sensations of ripe red fruits. The taut and compact tannin makes the wine very classic. Vibrant and vertical acidity. Extremely elegant and refined. We recommend decanting it a few hours before serving.

Pairings: Game, red meat, mature cheese.
