Corvina and Corvinone 65%, Rondinella 20%, Molinara,
Croatina, Pelara 15%.
SOIL - Puntara Monga vineyard
The vineyard, exposed to the breeze of Lake Garda, enjoys a happy microclimate where the natural amphitheater shape shelters many bird species and Amarone is its extraordinary expression. The presence of limestone enriches the perfumed component of the wines and makes them suitable for ageing.
HARVEST
In mid-September, the harvest is exclusively by hand. The bunches
they are selected based on the best conditions of technological and phenological maturity.
WINEMAKING
The drying of the grapes takes place in special drying rooms for approximately 15 minutes
weeks then the grapes are destemmed and softly pressed.
Fermentation takes place in stainless steel tanks at a controlled temperature of 18°-20° C with prolonged punching down for approximately 50 days.
MATURATION IN WOOD Large barrel and tonneau for approximately 60 months.
AGING 12 months in bottle.
SENSORY NOTES
Intense ruby red color with garnet reflections. It's the expression
extraordinary of our natural amphitheater. It penetrates sweetly, pouring out ripe black cherry, morello cherry and glazed blackberry jams and oak balms with a finish of spices, cinnamon, cocoa and coffee.
On the palate it is structured, silky and enveloping, of extreme elegance and expressive breadth which contains the typicality of the Classic area.
FOOD PAIRINGS
It goes well with game, grilled and boiled meats, mature cheeses and international dishes.
