Winemaking
The harvest is done by hand and with great caution, checking every single grape. The grapes arrive in the cellar in small containers and are delicately pressed with the stalks. Both alcoholic fermentation and malolactic fermentation take place in barriques.
REFINEMENT
After eleven months on the yeasts in barrique, the wine is decanted into steel containers for a further maturation on the yeasts for 22 months. The clarification of the must occurs through spontaneous precipitation. Subsequently the wine matures for another four months in the bottle.

With great elegance Troy shows off its typically Alpine character; notes of ripe tropical fruit such as mango, banana and galia melon are embellished with a hint of hazelnut and supported by an incredible freshness and saline minerality; the ending is long and
juicy with mineral tones and spontaneous. Subsequently the wine matures for another four months in the bottle.
