Production area
All the grapes for the production of this wine come from a single vineyard located in Montiggl near Lake Monticolo. The particular characteristic of the vineyard contributes to the development of noble rot, which allows the creation of a great sweet wine.
Winemaking
The harvest is carried out by hand in small containers at the end of November. After a brief maceration and whole bunch pressing, racking takes place through natural sedimentation of the must. Fermentation for 6 months in small oak barrels with subsequent refinement in the same barrels for a further 15 months.
Sensory notes and suggestions
Aromas of dried fruit, ripe apricots and quince make up the symphony of aromas, completed by a fresh pinch of citrus fruit. In the mouth the wine is soft, full with an accentuated and persistent sweetness in the finish. The late harvest Pasithea Oro is drunk as a dessert wine with desserts, but also pairs perfectly with vegetal, mature and spicy cheeses. A unique pleasure.
