Winemaking
The grapes are harvested entirely by hand and placed in small containers to keep them intact. The grapes are then destemmed and fermented at a controlled temperature (28°) in oak barrels, in which malolactic fermentation also takes place.
REFINEMENT
In barriques for 12 months, followed by maturation for approximately 6 months in a concrete container. After bottling there is a further period of refinement in the bottle for at least 6 months.
Tasting notes
ruby red, with intense purple hues
delicate aroma, with intense floral notes of violet, fruity hints of blueberry and blackcurrant
Strong taste , with a typical marked presence of tannins, very well managed; in the finish, delicious berries prevail with some touches of bitter cocoa. Excellent with tasty and substantial soups, with hard cheeses, with eggs. Excellent when paired with stuffed pizzas or game dishes. Spectacular with English cooked meats, such as roast beef or fillet.
