Winemaking
Manual harvest and selection of grapes. Destemming of the bunches and subsequent slow fermentation at a controlled temperature and delicate movement of the must in stainless steel tanks. Malolactic fermentation and aging for 12 months, partly in large wooden barrels (50%) and partly in barriques (50%). For the refinement in barrique, one third of new barrels are used. Blending three months before bottling.

Simple pairings
It goes well with shoulder of kid in olive oil and herbs braised on asparagus and wild vegetables, sliced beef on a bed of rocket, minestrone with hare, lamb shank with spinach polenta. It is also interesting to drink it with aubergines parmigiana.
Description of the wine
Color: sparkling and saturated ruby red
Nose: The fruity notes of blackberry and cranberry are joined by aromas of herbs such as mint and eucalyptus, enriched by a veil of black pepper. Overall, therefore, a very varied bouquet.
Taste: Thanks to its stable tannic structure and pronounced fruity aromas, this Merlot is excellently developed on the palate, with a complex structure and a persistent aftertaste.
