TYPE OF SOIL: alluvial of porphyritic origin with pebbles dating back to the Ice Age
TRAINING SYSTEM : pergola and guyot
PLANTING DENSITY: 7000 vines/hectare
AGE OF THE VINES: 12 years
QUALITATIVE IMPROVEMENT INTERVENTIONS:
thinning of 15% of the grapes in July, partial halving of the bunches
HARVEST: between mid and end of September
VINIFICATION : cold maceration between 5 and 6 hours;
clarification of the must through subsequent sedimentation
fermentation in stainless steel tanks at a controlled temperature of 20 °C
AGING: exclusively in stainless steel tanks
COLOR: yellow-greenish
FRAGRANCE: hints of sambuca and citrus notes
ORGANOLEPTIC DESCRIPTION: full, mineral, spicy, fragrant
