Winemaking
Manual harvest and selection of grapes. Destemming of the bunches and subsequent slow fermentation at a controlled temperature and delicate movement of the must in stainless steel tanks. Malolactic fermentation and aging for 12 months, partly in large wooden barrels (30%) and partly in barriques (70%). For the refinement in barrique, one third of new barrels are used. Blending three months before bottling.

Simple pairings
It goes very well with the back of roe deer with apple purée and red wine and ricotta gnocchi, back of suckling veal with poppy, loin of beef baked in foil with herbs, mashed potatoes and chestnut ragout, veal liver with butter and thyme, veal paillard with Mediterranean vegetables, or even barley or smoked venison with cranberry and horseradish sauce.
