This Cabernet is a jewel among the great wines of Alto Adige. Colterenzio's wisdom in processing and refining has allowed us to obtain a wonderful red wine, intense, structured and rich. Dark red reflections are accompanied by a bouquet with tones of blackcurrant, bitter chocolate, marzipan and vanilla. A great classic of international stature.
Description:
During the winemaking and aging processes it acquires a deep dark purple color. The full tannins and extraordinary persistence can still be felt in the mouth. Great aging potential: 10–15 years.
Pairing:
It goes well with red meats, grilled or roasted, but above all with game and spicy cheese.
Serving temperature: 16° C.

Area : The vineyards are located at an altitude of 430 m above sea level with excellent sun exposure. It is a rather dry area with sandy and gravelly soils of morainic origin.
Yield:35 hl/hectare
Winemaking:
Fermentation on the skins for 10 days with careful remixing of the cap and a subsequent maceration of 10–14 days. The young wine is then moved into new and used oak barrels. This is followed by malolactic fermentation and refinement for 18 months. Careful filtration before bottling.
